Keto Tiramisu

Cravings or just missing a really good dessert can be amazing motivators. So while in ketosis, are you saying that I can have my cake and eat it too? Oh yes my dear, yes you can. :)

So today, we will be attempting to replicate or Ketofy one of my favorite desserts. Let us begin with the Lady Fingers. With all honesty, I have no idea what I am doing. The best part? I am very motivated to enjoy this and I will make this happen. All I need here is a sweet non-cake-like substance that will work well, and it needs to be simple and strong enough to be able to hold together. I needs to be able soak up the espresso it will be dipped in and not crumble. Ok, challenge accepted!

Measurements:

1 1/2 cups almond flour

2 teaspoons baking powder

1/2 teaspoon baking soda

3 tablespoons sweetener

2 eggs

1/2 cup sour cream

4 tablespoons melted salted butter

Method:

Combine all the ingredients together with a spatula and bake in a well greased pan.

Bake at 350 degrees Fahrenheit for 15 to 20 minutes or until it is brown and the toothpick test says it is done. When this has cooled, cut as shown to replicate a ladyfinger.


Note: I never said this would be perfect, but it did taste very good. As you can see one piece is missing.

This Next Step is So Much Easier



All you will need here is 1 tablespoon espresso, instant powder, 1 cup of hot water and 3 ounces of dark rum.

Mix that together and let's dip our "ladyfingers" in it. Do not let them sit in the mixture for long. All you need to do is put the ladyfinger in the mixture in on one side for about a second, then flip it over to the over side for another second and then place in your rectangular dish. That's it. Please do not judge the picture below, again, not perfection.





Next Steps

What you will need is 4 egg yolks 1 cup heavy whipping cream

1 cup sweetener 1 container of mascarpone cheese

cocoa powder (room temperature)


Step One:

Part 1: In a medium bowl, whip the heavy whipping cream

until it forms soft peaks. Put this in the refrigerator.

Part 2: In another bowl, beat/whisk

the mascarpone cheese until

it is smooth.

Part 3: Over a pot of boiling water, mix together

the egg yolks and sugar in a heat safe bowl until the sugar is

dissolved. Stir constantly. We do not want

to cook the eggs. The mixture will be thicker and have a bright yellow color.


Step Two:

Get the whipped cream out the refrigerator and mix

the mascarpone cheese into it. Now add the egg and sugar

mixture and fold in. Make sure it is well incorporated.


Final Step:

Add 1/2 of the mascarpone mixture on top of the "ladyfingers,"

Then repeat the "ladyfinger" layer then the final mascarpone layer.

Cover with a clear wrap and refrigerate for at least 8 hours.

When you are ready to serve this magical experience, use a

sifter or strainer to dust over with cocoa powder. I did not

measure this, I just used what was needed to cover the Tiramisu.

Was it delicious? If not, then we have work to do now don't we. Either way, this was my first try and I enjoyed it. When I make this again, I will try another method and I will definitely share and compare.

This is how we improve, we have to begin somewhere and go from there.
