Keto Jalapeno Popper Omelette


I really do have a thing for omelettes. They are so versatile and you can pretty much make it into whatever flavor and taste you want. It's the magic of eggs again! They are truly eggstrodinary and eggscelent!



Let's Begin!


For this simple omelette all you'll need is:

3 eggs

1 jalapeno pepper

3 stalks escallion/green onions

2 tablespoons salted butter

3 ounces full fat cream cheese

salt and pepper to taste

1 cup or more dubliner cheese


Method

Grate cheese and add cream cheese, escallion, salt, pepper and jalapeno pepper and combine.

Beat eggs. Add about 2 tablespoons of water and salt before beating. This helps to make the eggs nice and fluffy.

Using medium low heat, add butter to your pan and allow it to melt.

Add eggs to the pan and allow it to set.

When the eggs have set, flip over gently and then begin to add the cream cheese filling.

When you have added the filling, fold in half.

Fold the once again, so that the fold is at the bottom of the pan.

Remove from the heat and plate the omelette.

I added spicy sausage with tomatoes and garnished with additional green onions and cheese.


So easy and Very delicious!!
