Keto Fluffy Belgian Waffles



Ingredients

3 eggs

3 ounces full fat cream cheese

1 tablespoon golden monk fruit sweetener

11/2 tablespoons baking powder

2 tablespoons heavy cream

1 teaspoon banana extract

1/2 teaspoon vanilla extract

1/2 cup almond flour

pinch of salt

2 tablespoons salted butter


Method

Add all the ingredients with the exception of the butter into a blender and blend until smooth. Stop blending and wipe the sides of the blender then continue blending until the batter is fully incorporated.

Preheat your waffle maker and spray with non stick olive oil.

Pour batter into the waffle maker and cover the surface, close the lid.

When the waffle is done, remove from the waffle maker and plate. Add pieces of the butter on the waffle while it is hot.

Continue the steps until the batter is gone.


*This batter yielded 3 large waffles for me.*





I garnished the waffles with both sugar-free banana and maple syrups from Choc Zero, added a sliced strawberry and a few blackberries. What waffle dish is complete without a heavy heaping of homemade sugar-free whipped cream? Well there you have it, these Keto Fluffy Belgian Waffles are yours to devour.
