This Keto Approved Zesty Italian Dressing has no sugar or canola oil. This is the perfect homemade dressing that all has the healthy ingredients we wished were more accessible on most of our supermarket shelves. It is the perfect fit for us keto and low carb high fat eaters. The taste has not been compromised and in my opinion this tastes so refreshing and light. Why didn't I make this earlier? This is delicious!
Ingredients
Part One
11/2 cups extra virgin olive oil (heated)
1 clove garlic thinly chopped or crushed
1/2 teaspoon dried lemon basil (or regular basil)
1 teaspoon dried parsley
2 teaspoons italian seasoning
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
Ingredients
Part Two
1/2 cup red wine vinegar
11/2 teaspoons sea salt
1 tablespoon lime or lemon juice
2 teaspoons sweetener
2 tablespoon diced pimiento
2 tablespoons diced pimiento juice from container
2 tablespoons parmesan cheese
Method Part One
Heat the oil gently. (Do Not Allow It To Boil)
Add all the ingredients on the left, (part one), in a glass or heat safe mixing bowl or measuring cup.
When the oil is hot, pour hot oil into the bowl/cup of dried herbs and spices and mix. Please use a heat safe spoon when mixing the hot oil mixture.
While stirring, the mixture will sizzle a bit as the oil is hot. Be careful during this process.
Stir continuously until the sizzling stops.
Cover mixture with a single paper towel and allow mixture to cool to room temperature. Keep in a safe cool area.
*Note: I am not a chef by any means and I mainly try things out. I heated the oil as a way to infuse the oil so that the taste will be uniformed. I have had some homemade salad dressings and when the oil separates when poured, I didn't like the of just oil. I want all the flavors of the herbs and spices to be infused into the oil.*
Method Part Two
When the mixture has completely cooled, pour mixture into a larger bowl, and add vinegar.
Whisk the ingredients together.
Add the salt, sweetener, pimiento with some of its juice, lime or lemon juice and the parmesan cheese. According to your tastes, you may add black pepper to this. I do not like black pepper and can live without it.
Whisk the ingredients together and you are done!
